Interview with Erminia Solomita (ADISURC): “we are serving around 6,000 meals a day”

During the EUG Salerno 2026, one of the most significant stress tests has undoubtedly been the dining service, which, alongside the University’s regular operations, is providing an impressive number of meals throughout the day.

“The figures we are dealing with every day are truly remarkable”, said Erminia Solomita, ADISURC’s Head of Dining Services. “For us, this is a real challenge. We are serving around 6,000 meals a day across the three scheduled meal services – breakfast, lunch and dinner. We are currently recording approximately 2,000 meals per service, taking into account both the students who continue to attend the campus and the participants in the Games. These numbers confirm our ability to manage a complex and highly organised service while maintaining high operational standards”.

It is a major team effort involving both the staff directly responsible for preparing the meals and those coordinating and organising the entire catering operation.

“To cope with the increased demand the catering team has been significantly expanded compared to its usual staffing levels and now includes around 60 people, including kitchen staff, serving personnel, logistics and warehouse operators, cleaning staff and coordination personnel. Managing the dining service during the Games represents a major commitment for our organisation, but we were fully prepared to meet this challenge thanks to our experience in handling large-scale operations and, above all, serving an international community. As part of our regular activities, we already welcome students, researchers and PhD candidates from many European and non-European countries, each with different dietary and cultural requirements”.

The food offering, naturally inspired by the principles of the Mediterranean diet, has also been designed to accommodate a range of cultural, ethical and religious needs.

“As in our everyday operations our catering service is based on the principles of the Mediterranean diet while also addressing the different nutritional, ethical and religious requirements of our guests. Vegan and vegetarian options are always available, and student-athletes may also request Halal-certified meat meals”.
